The rooftop brings together two separate venues, each with its own opening hours and menus: the panoramic restaurant and the Lounge Bar, located in the Pergola and the Lounge.

Chef and cuisine

The kitchen is led by chef Lori Moreau, who trained at École Ferrandi and under Michelin-starred chef Alain Pegouret. Her inventive cuisine showcases fresh, local and seasonal produce, and she personally serves the jus at the table.

The lunch and dinner menus are separate and change with the seasons. The lunch menu is shorter, changes regularly and always includes a vegetarian option.

The menu draws on a selection of producers and artisans:

  • Alexandre Polmard: meat, ‘Héritage’ label
  • Boucherie Agricole, Forville market: French-sourced meat
  • La Plume Blanche: organic eggs from Provence
  • Les Pêcheries: fish
  • Hervé Mons, Meilleur Ouvrier de France: cheese, La Fromagerie du Cannet
  • Producteurs Réunis, Nice: fruit and vegetables
  • À l’Olivier: AOP olive oil from Provence

The restaurant sorts its organic waste, which is collected by Apeyron, a company based on the Côte d’Azur. On request, the maître d’hôtel prepares a ‘Gourmet Bag’ so that guests can take home anything they have not finished.
